Cencaluk


Melaka's famous condiment


Cencaluk is a condiment made of fermented small shrimps or krill. In Melaka, the shrimps is called Udang Geragau. The shrimps in the pinkish colored cencaluk are readily identifiable the taste is salty. The shrimps is available in particular season in Pantai Klebang, Limbongan, Tanjong Kling and several coastal areas.


ASAM PEDAS MELAKA



Asam Pedas Melaka is a well known dish in Malaysia. Asam pedas is peppery hot and sour.

The combination of spicy and sour that makes this dish so famous. To have a full satisfaction eating this dish, you must eat with rice. Usually, the main ingredients often used is seafood or fresh water fishes. These ingredients were cooked in asam (tamarind) fruit juice with chili and many other spices.The cooking process involves soaking the pulp of the fruit until it is soft and then squeezing out the juice for cooking the fish. Either whole body or only the fish heads are added to make spicy and tart fish stew.
